Thinkin’ about my Dad. Thankful that he served. Sad that he was changed. But hopeful that one day, it might get better.

Memorial Day

My great-grandfather died in France in World War I. My grandfather fought in the South Pacific in World War II. My Dad and his brother (my uncle) fought in the jungles of Vietnam. My family has an extensive military history. They each fought so the next generation could live in freedom, without war. Sadly, history continues to repeat itself, and I now have dear friends serving overseas in various branches of the military.

To each family who has sent loved ones away never to return, thank you. To each serviceman who has given their life to protect our country and our freedoms, thank you. And to each member of the U.S. military actively serving to ensure our safety each and every day, thank you. You are very, very appreciated, and I continue to give thanks to God for each of you.

Tasty Tuesday – Baked Potato Soup

4 lg. potatoes

1 1/2 stick of butter

2/3 c. all-purpose flour

3 c. milk

2 tsp. salt, pepper to taste

4 green onions, chopped

3 oz. real bacon pieces

2 c. shredded cheddar cheese

8 oz. sour cream

Bake potatoes at 400 degrees for 1 hour. Let cool. Scoop out pulp and discard skins. Melt butter in large pot over low heat. Add flour, stirring until smooth. Gradually add milk and broth. Cook over medium-high heat stirring constantly until mixture is thick and bubbly. Reduce heat to low and add potato pulp, salt, pepper, onions, bacon and cheese. Cook until thoroughly blended. Add sour cream.

This recipe was adapted from a cookbook printed by a sister-church, and has served me well. I like it in all kinds of weather, but I prefer it on the cold, wet days. It is very filling (and very bad for you…which makes it really good!), and it’s a great comfort food. Do you have any special comfort foods on the dreary days?

Guess who I got to see, live and in person, a few days ago…

The cheering is coming from my mom. We had amazing seats right on the ice! We had no idea that we would be sitting so close, and I still feel like it was all a dream. We had a fantastic evening! The Lord has truly given each of these skaters a gift, and I feel so blessed to have had a front row seat to see so much talent!

CBS Cares…and Cracks Me Up

So I was watching a WVU March Madness basketball game on CBS earlier this week when I saw this 30-second commercial:

…which in turn made me laugh hysterically and almost fall off of my couch. Then I did what any normal person would do: I looked up the full length version on YouTube.

The singer is Peter Yarrow of Peter, Paul, and Mary (which makes me love this even more). March is National Colorectal Cancer Awareness Month, so I guess my advice for the weekend is to do whatever you need to do to stay healthy!
